As per my recent thread I remember seeing some suggestions for home made chilli sauce on IIS. Can anyone give me a good recipe?

I grow my own chillies & make 'chilli jam'.
Just rinse, add 1/4 vol olive oil & some salt (as a preservative) and use a blender to pulverise the lot.
Keeps in the fridge for weeks and/or you can freeze it.
I prefer to use green chillies - a fresher, peppery flavour, compared to red ones.
Even decorative chillies (they often fruit 'upside down') work fine.

Same as Dean, I also grow a few varieties of chillies (from semi hot like Birds Eye to Carolina Reapers).
I like mixing a few types of chilies when making either chilli paste or chilli sauce.
My method:
Rinse chillies, blend on high with white vinegar. The mix is about 80% chillies and 20% vinegar. Simmer for about 5 minutes. Done.
If I want to make sauce, I add more vinegar. Keeps for months in the fridge, can be frozen too.

tea spoon of minced garlic per 500 g of stock
tea spoon of minced ginger per 500 g of stock(these two personal choice)
