The first thing I noticed from the images from the Smart-1 probe which hit the moon was the stars in the background, very bright, not trying to fan the conspiracy theory flames, but why can't we see stars in any of the Appollo pics, Or can we and I haven't looked hard enough?

As Chuck states, it's due to the reflections on the lit side of the moon. And that's why you can't see the stars on the apollo moon shots.. The reflection of sunlight off the dust on the moon is apparently very very bright. And would definitely cause problems trying to capture faint starlight in a normal photo. Try it with your own camera pointed up with a short exposure.
