Taking the advice given, I grabbed some more SII data the other night. The clouds here have been quite annoying with a lot of high level wispy rubbish over most of the sky. While I think I was lucky enough to get this data with mostly clear skies, I realised I had no real confidence I would be able to do any RGB imaging. And I was right, I managed about 2 hours of imaging before having to give up for the night.
If I go for more data on it, I think I'll target OIII. However, I think I will leave this for now.
The details:
Sharpstar 107PH with a 0.6 reducer
ZWO ASI1600MM-C at -15C, Unity settings.
Ha 13 x 180 sec
OIII 12 x 180 sec
SII 44 x 180 sec (an extra 32 frames)
Darks and flats applied.
Processed in PixInsight. I've tried to push the colours around to highlight the different channels. And to ensure "my" little PN survived as well.

Feel free to give feedback, etc. Although I'm happy with this version, I'm sure the brains trust here can suggest improvements.
