Try the book "New eyes on the Sun" published by Springer. A useful guide for amateurs to solar observing and background theory.

Another handy book is the Philips Sun Observers Guide. Not sure if there has been a recent reprint but the info is mostly relevant for anyone wanting to observe and / or image the sun.
