Hi Mark,
What settings did you use to calibrate the guide star? In short, following gives good result with AP:
- Calibrate close to equatorial meridian.
- Calibrate for atleast 10sec and if possible do it for 15/20sec
- Post a screen shot of guider settings screen. 2nd image in the link http://www.cyanogen.com/help/maximdl/Autoguiding.htm

I think in your image axis is flipped. in the Graph x is DEC and not RA. To make debugging easier either flip the axis in maxim or change your camera orientation so that RA button moves the guide star horizontally and Dec button moves the guide star vertically.

From what I see from the pictures, in your guide graph X is DEC. and its drifting up and then brought down by correction but not enough. It's also drifting faster than my liking indicating something went wrong during polar alignment (probably the reason why guide star does not return in the same spot when calibrating). Try to bring the Dec drift < 1 pixel for 5min.

Try to select a guide star which is not Saturated, this is very important.
