12V 20A PWM Controller Advice

So I have some experience with 12V PWMs, having used them (@6A) in my cold finger cooled DSLR controller to regulate set point for the TEC, and in some heater strap regulators. But my latest little project is a little more demanding: I am trying to build or buy a variable speed motor controller for my Watersnake T24, 12V kayak motor. In stock configuration it has a two speed selector, but I would like to be able to vary the motor speed, and run it with less wasted amps if that speed is not needed. I need to find a waterproof boxed PWM solution that can handle 12V, 20A. The internet shows me this:

Does anyone have any experience with creating variable controls for these type of motors, in marine or near wet environments?

This guy has built a controller into the head unit but no details:

But this guy has taken it further and you can actually see what he has done, which seems straight forward.
