Help with DSLR B & W and luminous

I have a new Canon 1000D and apparently they can image in monochrome (B and W). Would it be possible to image monochrome using RGB filters and then combine them to make a colour image? If it is possible, would I need special filters or would any old filters work?
I don't understand what luminous images are or how they are taken but they get mentioned when talking about monochrome images e.g. the L in LRGB. Could someone explain what they are and is it possible to take them with a DSLR?

Any other information that is relevant to these questions is greatly appreciated.
