I believe your still at the mercy of the Bayer Matrix filtering light incoming to the pixels. So some are dedicated to red, some to blue and more to green. The pixels covered with those filters effectively only see that colour, as opposed to uncovered pixels which accept any photons (as in a mono sensor). So if you program the camera to monochrome, it simply removes colour identification from the file, and this does not increase the pixel resolution in any way, nor allow masked pixels to 'see' any photons. Your image will appear in monochrome but it will be identical in every other respect to the colour version. So I believe.
