Leveling a Camera Sensor [5dmk3]

Hi guys, picking some brains yet again.

I've astromodded my 5d and noticed that the sensor is adjustable using 3 spring loaded screws and locating pins in order to "level" the sensor with the flange and focal plane.

Does anyone have any tips on re-adjusting this so Auto Focus works like it originally did and the field remains flat?
Alternatively if anyone knows someone who might provide this service I may be interested if I can afford it.

I was going to adjust it myself using a lens, switching between live view and the viewfinder until the center focus points between each focusing method is identical.
Then use opposing focal points to make sure the sensor is level left and right, up and down.
It seems like it will take quite a long time to readjust things constantly until it all levels out and live view and viewfinder focusing is identical.
A final test would be to have it on the back of a scope and check focus with APT's focus aid and a star to the edge of the FOV, then rotate the camera 180* and ensure the reading is the same, and then rotate 90, check, 180 and check.

I'd appreciate any help here, because at this point my plan is essentially to wing it
