There are several paths you can follow here.

You can use colour CCD's or Monochrome.

In terms of colour, you would be best off with the Imaging source colour camera's. These are fast and reliable with low noise.

With Monochrome, there is a variety of camera companies available. There is the Imaging Source, Lumenera and Point Grey Research. I use Lumenera and have been really happy with it. Solid performer but I am looking for its replacement. Point grey is the top end of town; cost plenty but great performance. Imaging Source again is solid and cost effective but only 8 bit performance. Good cameras but if you want to go further you will need to buy again.
