I updated my iPod touch and have noticed similar problems, but put it down to maybe not really up to spec for iOS5. Glad I left my wife's iPad alone, i'll wait for a few releases or maybe not at all.
I had wondered if maybe some apps needed an update to work properly with iOS5?
