Very good writeup Tom. I am about to use 2 setups as well.
One thing that may be of interest to you would be the new generation of one shot colour chips Kodak has had out for a while now. They are KAI series chips and Kodak calls it True Sense. They are an LRGB matrix instead of Bayer RGGB matrix.
They have something like 43% QE on many chips and most are smaller pixels which would be a better match for your scopes. The 11002 one shot colour is 34 to 42% QE which is higher than most but typical QE for OSC is around 23% or less. So they are nearly twice as sensitive for low light like we use them for.
