With birding, the isolation of your subject from your background is paramount.

Creamy bokeh at f/2.8 (or f/2.0, if you have lots of funds) is what you're after. For depth, just drop back to f/4.

f/2.8 is so much more versatile, especially on consumer bodies where high-ISO performance is not guaranteed.
