70 to 80mm for wide field imaging. Is there a noticeabe difference in results as there can be in price?

It depends on the focal ratio, type of imaging (RGB vs narrowband) and how close you look at the pixels around bright stars.

Initially it will be with a DSLR, probably around f5 or f6 from the scopes I have looked at.

A triplet will definitely be better than a doublet in that case. More expensive but the colour correction and sharpness will be considerably better.
